Lamb and rice stew
(recipe from Crete, Greece)
Ingredients for four people:
1kg (2¼ lb) lamb (diced)
100ml (3¼ fl oz) extra virgin olive oil
5 ripe tomatoes
150ml (5 fl oz) water
150gr (5¼ oz )goat cheese, grated
Salt and freshly ground black pepper
Directions:
Preheat the oven at 200ºC (392ºF).
Put the meat in an oven-proof casserole. Crash the tomatoes, and add them to the meat, also add salt and pepper. Add oil and water and put the casserole in the oven. After about 30 minutes, cook the rice in salted boiling water according to the pack instruction, drain and add to the casserole. Let it cook for fifteen more minutes. once out of the oven, sprinkle with grated goat cheese and serve hot.

Albondigas en chipote
(meatballs, recipe from Mexico)
Ingredients for four people:
450gr (1 lb) beef meat, mince
450gr (1 lb) pork meat, mince
Salt and pepper
1 cup of boiled rice
3 egg yolks
1 slice of bread, soaked in milk
6 mint leaves, finely chopped
2 boiled eggs, diced
2 tbsp extra virgin olive oil
2 cloves of garlic, finely chopped
8 tomatoes, roasted and chopped
1 pinch of ground cumin
2 chili peppers, ground
2 cups of beef stock
8-10 tortillas
Mix the two meats together, season with salt and pepper, add the boiled rice, the egg yolks, bread and 3 mint leaves: mix well, with a fork at the beginning and finish with your hand. Take a tablespoon of meat and form meatballs the size of a walnut. Carefully place a piece of boiled egg in the middle of each one. Put it in the fridge for one hour.
Heat the oil in a frying pan and sauté the onion, on a low heat for 10-12 minutes. add the tomatoes, cumin, chili peppers, and cook until you get a thick sauce. Add the stock and let it simmer for a couple of minutes. Adjust seasoning and add the remaining mint leaves. Carefully add the meatballs in the sauce, and cook on low heat for one hour. Serve with hot tortillas.
